Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Sear the Pork Chops: Heat the olive oil in a large skillet over medium-high heat. Season the pork chops with salt, pepper, and smoked paprika. Sear them until golden brown on both sides, about 3-4 minutes per side. Remove and set aside.
  3. Prepare the Onions and Mushrooms: In the same skillet, melt the butter. Add the onions and cook until caramelized, about 10 minutes. Add the garlic and mushrooms, and cook until fragrant and softened.
  4. Make the Sauce: Pour in the chicken broth, deglazing the skillet by scraping up any browned bits. Reduce the broth by half, then stir in the heavy cream and fresh thyme. Simmer until the sauce thickens, about 5 minutes.
  5. Assemble the Dish: Layer the sliced potatoes evenly in a greased casserole dish. Arrange the pork chops on top of the potatoes. Pour the creamy mushroom sauce over the entire dish.
  6. Bake: Cover with foil and bake for 1 hour. Remove the foil and bake uncovered for an additional 15 minutes, until the potatoes are tender and the sauce is bubbling.
