- 2 large tomatoes, finely diced
- 1 large cucumber, finely diced
- ½ medium red onion, finely diced
- (Optional) 1 bell pepper (any color), finely diced (reduce or omit for a more traditional flavor)
- Juice from 1 lemon (adjust to taste)
- 1–2 tablespoons fresh parsley, finely chopped
- (Optional) ½ – 1 tablespoon fresh mint, finely chopped
- 4 tablespoons olive oil
- Salt and pepper, to taste
Instructions
- Step 1: In a large bowl, combine the finely diced tomatoes, cucumber, red onion, and (if using) bell pepper.
- Step 2: Add the finely chopped fresh parsley and (if using) fresh mint to the bowl.
- Step 3: Drizzle the lemon juice and olive oil over the vegetables, tossing everything well to ensure even coating.
- Step 4: Season with salt and pepper according to your preference.
- Step 5: Enjoy immediately for the freshest flavor, or chill for about 15-30 minutes before serving.
