- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 cup bread crumbs (plain or Italian-style)
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika (optional, but highly recommended for extra flavor)
- Salt and pepper, to taste
- 2 tablespoons olive oil (for searing)
- Fresh parsley, chopped (for garnish)
For Topping (Optional, but totally worth it!):
- 1/4 cup ranch dressing or creamy garlic dressing
- 2 tablespoons melted butter
Instructions
- Flatten the Chicken: Place the chicken breasts between two sheets of plastic wrap and pound them out to about 3/4-inch thick. This ensures they cook evenly. Season both sides generously with salt, pepper, garlic powder, onion powder, and a sprinkle of paprika if using.
- Coat the Chicken: First, dredge each piece of chicken in the flour, giving it a gentle shake to remove any excess. Then, if you’re feeling fancy, lightly dip each chicken breast into ranch dressing. Otherwise, jump straight to pressing them into the bread crumbs mixed with grated Parmesan. Press firmly so the coating sticks like a dream!
- Sear to Perfection: Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the coated chicken breasts. Sear each side for about 3–4 minutes until gorgeously golden brown. Then, remove the skillet from heat.
- Add the Good Stuff: Preheat your oven to 400°F (200°C). Slather a little more ranch or garlic dressing over the top of each chicken breast. Pile on a generous amount of shredded mozzarella and an extra sprinkle of Parmesan.
- Bake to Melted Bliss: Slide the skillet into the oven and bake for about 10–15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbling and beautifully golden.
- Garnish and Serve: Let your masterpiece rest for a few minutes, then shower it with fresh chopped parsley. Serve it up with your favorite sides — mashed potatoes, crisp salads, or even garlic bread.
