Easy Heavenly Chicken

  • 10 boneless, skinless chicken thighs (you can also use chicken breasts)
  • 16 oz sour cream
  • Salt and pepper to taste
  • At least 1 tablespoon garlic powder (feel free to use more for extra flavor)
  • 4 sleeves of Ritz crackers, crushed
  • 1 stick of melted butter

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a mixing bowl, generously season the sour cream with garlic powder, salt, and pepper.
  3. Coat each piece of chicken by dipping it into the seasoned sour cream, ensuring it’s fully covered.
  4. Roll the chicken in the crushed Ritz crackers, pressing gently so the crumbs adhere evenly.
  5. Arrange the coated chicken pieces on the prepared baking sheet.
  6. Drizzle the melted butter evenly over the chicken.
  7. Bake for about 45 minutes, or until the chicken is golden, crispy, and thoroughly cooked.

Notes

  • Seasoning: For beginners, try around 1/2 – 1 tsp salt, 1/4 – 1/2 tsp pepper, and 1-2 tsp garlic powder for 10 chicken thighs. You can always adjust next time!
  • Sour Cream: Sour cream is moist, which helps the chicken stay tender. Just make sure to coat the chicken evenly and press the cracker crumbs on gently so they stick well.
  • Melted Butter: One stick of melted butter for 10 thighs might be a lot. You could try using a bit less or brushing it on instead of drizzling to control the amount.
  • Crushing Ritz: When crushing the Ritz crackers, don’t make them too fine if you want a nice crispy and textured coating. Some bigger pieces are good!
