- 2 lbs beef stew meat
- 1 cup sliced mushrooms
- 1 can cream of mushroom soup
- 1/2 cup beef broth
- 1/2 cup sour cream
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Quick Prep: Slice the mushrooms and trim any large beef chunks into bite-sized pieces.
- Sear for Flavor (Optional but Recommended): In a hot skillet, sear the beef in a drizzle of oil until browned on the outside. This adds a deeper, richer flavor to the final dish.
- Into the Crockpot: Add the beef, mushrooms, garlic powder, onion powder, salt, and pepper to the crockpot. Pour in the cream of mushroom soup and beef broth. Give everything a good stir to coat.
- Let It Slow Cook: Cover with the lid and cook on low for 6–7 hours or high for 3–4 hours, until the beef is fork-tender and juicy.
- Creamy Finish: About 15 minutes before serving, stir in the sour cream. Let it heat through without boiling, just enough to make the sauce velvety and luscious.
- Serve & Enjoy: Ladle the beef tips and creamy mushroom gravy over mashed potatoes, rice, or egg noodles. Add a sprinkle of parsley if you’re feeling fancy.
