Baked Burrito Casserole

Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 1 packet taco seasoning
  • 1 can refried beans
  • 1 can (10.5 oz) cream of mushroom soup (undiluted)
  • 1/2 cup sour cream
  • 1 pack large flour tortillas (about 6-8, depending on your baking dish)
  • 2 1/2 cups shredded Mexican blend cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and no longer pink. Drain any excess fat.
  3. Stir in the taco seasoning and refried beans. Mix well and let it heat through for a few minutes.
  4. In a separate bowl, combine the cream of mushroom soup and sour cream until smooth.
  5. Spread half of the soup mixture on the bottom of a 9×13-inch baking dish.
  6. Place tortillas over the soup layer, tearing them if needed to cover the bottom.
  7. Layer half of the beef mixture over the tortillas, then sprinkle with about 1 cup of cheese.
  8. Repeat the layers: soup, tortillas, beef, cheese. Finish with a generous layer of cheese on top.
  9. Bake uncovered for about 20 minutes, or until the cheese is melted and bubbling.
  10. Let it cool for 5 minutes before serving. Enjoy!
