- 1 pound ground beef
- 1 small onion, chopped
- 1 packet taco seasoning
- 1 can refried beans
- 1 can (10.5 oz) cream of mushroom soup (undiluted)
- 1/2 cup sour cream
- 1 pack large flour tortillas (about 6-8, depending on your baking dish)
- 2 1/2 cups shredded Mexican blend cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and no longer pink. Drain any excess fat.
- Stir in the taco seasoning and refried beans. Mix well and let it heat through for a few minutes.
- In a separate bowl, combine the cream of mushroom soup and sour cream until smooth.
- Spread half of the soup mixture on the bottom of a 9×13-inch baking dish.
- Place tortillas over the soup layer, tearing them if needed to cover the bottom.
- Layer half of the beef mixture over the tortillas, then sprinkle with about 1 cup of cheese.
- Repeat the layers: soup, tortillas, beef, cheese. Finish with a generous layer of cheese on top.
- Bake uncovered for about 20 minutes, or until the cheese is melted and bubbling.
- Let it cool for 5 minutes before serving. Enjoy!
