Ingredients
For the Meatballs:
- 2 tablespoons olive oil
- 1 pound ground beef
- 1 large egg, beaten
- ½ cup breadcrumbs
- ½ onion, grated
- ½ teaspoon garlic powder
- ¼ teaspoon ground nutmeg
- 1 teaspoon Kosher salt
- ½ teaspoon freshly ground black pepper
For the Casserole:
- 2 ½ cups egg noodles
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 pint heavy cream
- 1 ½ cups Swiss cheese, grated
- Fresh parsley, chopped (for serving)
- Kosher salt and freshly ground black pepper (to taste)
How to Prepare Swedish Meatball Noodle Bake
Step 1: Preheat your oven to 375°F. Lightly grease a 9 x 13-inch baking dish with nonstick spray and set it aside.
Step 2: In a large bowl, combine the ground beef, breadcrumbs, beaten egg, grated onion, nutmeg, garlic powder, salt, and pepper. Mix until just combined. Take about 1 ½ tablespoons of the mixture and roll it into a ball. Continue this process with the remaining mixture.
Step 3: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the meatballs and cook them until they are browned on all sides. Transfer the cooked meatballs to a plate and set aside.
Step 4: In the same skillet, cook the egg noodles in a large pot of salted boiling water for two minutes less than the package instructions.
Step 5: After removing the meatballs, pour the beef broth, heavy cream, and Worcestershire sauce into the skillet. Scrape up any browned bits from the bottom of the pan and let the mixture simmer for about 10 minutes, until it thickens slightly. Season with salt and pepper to taste, then remove from heat.
Step 6: In the prepared baking dish, combine the cooked noodles with the meatballs. Pour the sauce evenly over the noodles and meatballs, then sprinkle the grated Swiss cheese on top.
Step 7: Bake in the preheated oven for approximately 20 minutes, or until the cheese is melted and bubbly. Once done, take it out and let the casserole sit for about 5 minutes.
