Mexican White Trash Casserole

  • 1 pound ground beef
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) corn, drained
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 package (8 ounces) cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 package (8 ounces) tortilla chips
  • 1 teaspoon taco seasoning
  • Salt and pepper, to taste
  • Chopped green onions, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain off any excess fat.
  3. Stir in the black beans, corn, diced tomatoes with green chilies, taco seasoning, and a pinch of salt and pepper. Let the mixture simmer for about 5 minutes, stirring occasionally.
  4. In a mixing bowl, blend together the softened cream cheese and sour cream until smooth and creamy.
  5. Lightly grease a 9×13-inch baking dish. Spread half of the tortilla chips over the bottom.
  6. Layer half of the beef mixture over the chips, then spread half of the cream cheese mixture on top. Sprinkle with 1 cup of shredded cheddar.
  7. Repeat the layers with the remaining chips, beef mixture, cream cheese mixture, and top with the rest of the cheddar cheese.
  8. Cover the dish with foil and bake for 25 minutes.
  9. Remove the foil and continue baking for another 10–15 minutes, or until the cheese is bubbly and golden.
  10. Let the casserole cool for a few minutes, then sprinkle chopped green onions over the top before serving.
