Homemade  Easy Cheesy Pizza Pockets Recipe

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Servings: 4 (makes 8 pockets)
Equipment Needed: Baking sheet, parchment paper, rolling pin (optional), pastry brush, fork

Ingredients:

  • 1 can refrigerated crescent roll dough or pizza dough
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup pepperoni slices (or other toppings like mushrooms, bell peppers, sausage, etc.)
  • 1/4 tsp garlic powder
  • 1/4 tsp Italian seasoning
  • Olive oil or melted butter (for brushing)
  • Parmesan cheese (for sprinkling)

Instructions:

  1. Preheat the Oven: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper so your pockets won’t stick.
  2. Roll Out the Dough: On a lightly floured surface, unroll your crescent roll or pizza dough. If you’re using crescent rolls, separate them into triangles. Using pizza dough? Just cut it into 8 even rectangles.
  3. Add the Filling: Spoon a small amount of pizza sauce onto each piece of dough. Top with shredded mozzarella and your favorite toppings (pepperoni is always a crowd-pleaser).
  4. Season and Fold: Sprinkle a pinch of garlic powder and Italian seasoning over each one. Fold the dough over to enclose the filling and press the edges closed with a fork.
  5. Brush and Top: Brush each pocket with olive oil or melted butter. Sprinkle some Parmesan on top to add a little extra flavor and crunch.
  6. Bake to Golden Perfection: Pop them in the oven and bake for 12-15 minutes, or until they’re golden brown and bubbly.
  7. Cool & Serve: Let them cool for a few minutes before serving. Optional: serve with warm pizza sauce for dipping.

Variations to Try

  • Swap the pepperoni for cooked sausage, grilled veggies, or even leftover chicken for a different flavor each time.
  • You can also add a bit of ricotta for a creamy twist or use pesto instead of pizza sauce for a herby upgrade.

Pro Tips

  • To avoid soggy pockets, don’t overload them with sauce – just a thin layer will do.
  • Want that extra golden crust? Use an egg wash (1 beaten egg + 1 tbsp water) instead of butter.
  • And here’s a fun one: before baking, poke a tiny hole in the top with a toothpick to let steam escape and prevent bursting.

Enjoy your homemade cheesy pockets – crispy on the outside, gooey on the inside, and 100% delicious!
