Easy Spinach Puffs

  • 4 slices thick-cut bacon
  • 8 oz reduced-fat cream cheese (Neufchâtel), cut into chunks
  • 2 large eggs, separated
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • ¼ tsp dried oregano
  • 10 oz frozen spinach, thawed and thoroughly dried
  • ½ cup crumbled feta cheese (about 2 oz)
  • ¼ cup finely grated Parmesan cheese (about 1 oz)
  • 2 sheets frozen puff pastry (9- or 10-inch), thawed overnight (recommended: Pepperidge Farm)

Instructions

Prep the Oven and Bacon:

  • Preheat the oven to 400°F and place racks in the upper and lower thirds.
  • Bake the bacon until crispy, then chop into small pieces. Spray 18 muffin cups across two standard muffin tins with nonstick spray.

Make the Filling:

  • In a microwave-safe bowl, soften the cream cheese in 10-second intervals until melted.
  • Mix in one egg, garlic powder, black pepper, and oregano until smooth.
  • In another bowl, combine spinach, feta, Parmesan, and bacon bits. Add this mixture to the cream cheese mixture and adjust seasoning to taste.

Prepare the Puff Pastry:

  • Roll out one sheet of puff pastry on a floured surface, smoothing out any creases, and cut into nine squares.
  • Place each square into a muffin cup, pressing the center down and leaving the corners hanging over the edge.

Assemble and Bake:

  • Spoon the spinach filling into each pastry cup.
  • Fold the pastry corners over the filling and lightly press the center.
  • Beat the remaining egg and brush it over the tops of the pastry.
  • Bake for 21-24 minutes, rotating the pans halfway through, until the puffs are golden and crispy. Cool in the pans for 10 minutes before transferring to a wire rack.

Notes

  • You can freeze these Spinach Puffs for up to a month and reheat them at 375°F.
  • The filling can be made ahead of time and stored in the fridge, but it’s best to fill the pastry cups just before baking for optimal texture.
  • Serve these puffs warm or at room temperature for maximum flavor and appeal.
