- 1 large head of cauliflower, cut into florets
- 2 cups cooked chicken breast, shredded
- 1 cup buffalo sauce (adjust to taste)
- 1/2 cup ranch dressing or blue cheese dressing
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 3 green onions, chopped
- Salt and pepper to taste
- Fresh parsley or chives, chopped (optional, for garnish)
Instructions
- Preheat the Oven: Set your oven to 400°F (200°C) and lightly grease a 9×13-inch baking dish. A little spray or a thin layer of oil will do the trick.
- Prep the Cauliflower: Steam or blanch the cauliflower florets just until they’re fork-tender, about 5–7 minutes. Don’t overcook — we want them to hold their shape in the casserole. Drain well and pat dry with a clean kitchen towel or paper towels.
- Mix It Up: In a large bowl, combine the shredded chicken, buffalo sauce, and your choice of dressing. Stir in the cauliflower and mix until everything is nicely coated. Season with salt and pepper to taste.
- Layer the Casserole: Pour the cauliflower and chicken mixture into your prepared baking dish. Spread it out evenly, then sprinkle the cheddar and mozzarella cheeses all over the top.
- Bake to Perfection: Pop it in the oven and bake for 20–25 minutes, until the cheese is melted, bubbly, and golden around the edges.
- Finishing Touches: Once out of the oven, sprinkle the chopped green onions and fresh herbs on top. Serve it up warm and enjoy every creamy, spicy bite.
