Instructions
Preparing the Crust:
- Melt 7 tablespoons of unsalted butter in a medium microwave-safe bowl, heating for about 30 seconds or until fully melted.
- Stir in 1 ½ cups of graham cracker crumbs and 3 tablespoons of granulated sugar. Mix until the crumbs are well-coated.
- Lightly spray an 8 x 8 baking dish with non-stick cooking spray, then press the graham cracker mixture into the dish, forming an even crust. Set aside.
Making the Filling:
- In a large mixing bowl, beat 8 ounces of softened cream cheese with an electric mixer until smooth.
- Add 1 cup of powdered sugar and 1 teaspoon of pure vanilla extract to the cream cheese, mixing until combined.
- Gently fold in an 8-ounce container of Cool Whip, mixing just until incorporated to maintain the light texture.
- Spread the cream cheese mixture evenly over the prepared graham cracker crust using a spoon or offset spatula.
- Top with cherry pie filling, spreading it evenly to cover the cream cheese layer completely.
Chilling:
- Refrigerate for at least 2 hours (overnight for best results) to allow the dessert to set and the flavors to meld.
- Serve chilled and store any leftovers in the fridge.
