  • 7 tablespoons unsalted butter
  • 1 ½ cups graham cracker crumbs (about 9 whole crackers)
  • 3 tablespoons granulated sugar

For the Filling:

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 container (8 ounces) Cool Whip
  • 1 can (21 ounces) cherry pie filling

Instructions

Preparing the Crust:

  1. Melt 7 tablespoons of unsalted butter in a medium microwave-safe bowl, heating for about 30 seconds or until fully melted.
  2. Stir in 1 ½ cups of graham cracker crumbs and 3 tablespoons of granulated sugar. Mix until the crumbs are well-coated.
  3. Lightly spray an 8 x 8 baking dish with non-stick cooking spray, then press the graham cracker mixture into the dish, forming an even crust. Set aside.

Making the Filling:

  1. In a large mixing bowl, beat 8 ounces of softened cream cheese with an electric mixer until smooth.
  2. Add 1 cup of powdered sugar and 1 teaspoon of pure vanilla extract to the cream cheese, mixing until combined.
  3. Gently fold in an 8-ounce container of Cool Whip, mixing just until incorporated to maintain the light texture.
  4. Spread the cream cheese mixture evenly over the prepared graham cracker crust using a spoon or offset spatula.
  5. Top with cherry pie filling, spreading it evenly to cover the cream cheese layer completely.

Chilling:

  1. Refrigerate for at least 2 hours (overnight for best results) to allow the dessert to set and the flavors to meld.
  2. Serve chilled and store any leftovers in the fridge.
