  • 1/4 cup finely diced dill pickles
  • 1 tablespoon mustard
  • 3 tablespoons ketchup
  • 1/2 teaspoon paprika
  • 1 yellow onion, diced (divided)
  • 1 pound ground beef
  • Salt, pepper, garlic powder (to taste, optional)
  • 4 soft taco-size tortillas
  • 1/2 cup lettuce, shredded
  • 1/2 cup dill pickles, sliced
  • 1/2 cup shredded cheddar cheese

Instructions

Step 1: Make the Special Sauce

In a small bowl, whisk together the mayonnaise, finely diced pickles, mustard, ketchup, and paprika. Give it a taste and adjust as needed. Pop it in the fridge while you prep everything else—this lets the flavors meld.

Step 2: Cook the Beef

In a medium skillet over medium heat, cook the ground beef with half of the diced onion. Break up the beef as it cooks, and season with salt, pepper, and garlic powder if you like. Once fully cooked and the onions are soft, drain any excess grease. Transfer the meat to a bowl.

Step 3: Assemble the Wraps

Lay out the tortillas. Start with a layer of shredded lettuce, then a handful of sliced pickles, a scoop of the beef mixture, a sprinkle of the remaining raw diced onion, shredded cheddar cheese, and a generous drizzle of that special sauce.

Step 4: Fold and Serve

Fold the tortillas like a burrito or wrap, tucking in the sides as you go. Serve as-is or give them a quick toast in a pan for extra crispiness.
